During the nine month work time, the changeable menu varies according the seasonality of products like, imported fresh porcini mushrooms from Abetone, fresh white or black truffles from Acqualagna and rare regional cheese and ham.
All the products and cooking processes are under the constant supervision of the chef Danilo Petrini, responsible for the composition of many gastronomic delights.
